Ingredients

  • 12 ounces fully cooked andouille sausage 1 package
  • 1/4 cup dry white wine
  • 2 boneless skinless chicken breasts cut into 1-inch cubes
  • 3 bell peppers green, red, and yellow, diced
  • 3 ribs celery chopped
  • 1 red onion diced
  • 4 cloves garlic minced
  • 2 cups unsalted chicken broth
  • 28 ounces (can) crushed tomatoes
  • 3-4 tablespoons Creole seasoning
  • 1 teaspoon red pepper flakes
  • 2 sprigs fresh thyme or 1/2 teaspoon dried thyme
  • 2 bay leaves
  • Kosher salt to taste
  • Cracked black pepper to taste
  • 1 1/2 cups white rice uncooked
  • 1/2 pound uncooked shrimp peeled and de-veined
  • Cilantro for garnish (optional)
  • Scallions for garnish (optional)
