INGREDIENTS:
Sauce
- 3/4 cup ketchup
- 1/4 cup packed dark brown sugar
- 1/2 cup sunflower oil
- 2 tablespoons fresh lemon juice
- 1/4 cup apple cider vinegar
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly cracked black pepper
Pasta
- 1 pound short pasta of choice
- 1 cup diced red bell pepper
- 1 cup diced green bell pepper
- 1 cup diced yellow bell pepper
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumber
- 1/2 cup finely diced red onion
- 1/3 cup chopped fresh flat leaf parsley leaves, plus extra for garnish
- 1 cup bocconcini, halved
