INGREDIENTS:

  • 3tablespoons butter
  • 1small jalapeno pepper, diced
  • 1⁄2cup leek, diced (1/2-inch pieces, bottom white part only)
  • 2garlic cloves, minced
  • 1teaspoon kosher salt
  • 1⁄2teaspoon black pepper, fine grind
  • 1 1⁄2cups heavy cream
  • 1cup half-and-half cream
  • 2cups cheddar cheese, grated
  • 2cups monterey jack cheese, grated
  • 5lbs russet potatoes, peeled and sliced into thin rounds (about 1/16-inch thick)
