Tune into In the Kitchen with Kat to win a prize!

Tune in around 12:40 pm TODAY for a chance to win a pair of tickets to the Outlaw Music Festival in September at the Veterans United Home Loans Amphitheater at Virginia Beach (9/14)!

Ingredients

  • 1 teaspoon olive oil
  • 1 onion, finely chopped (about 1 cup)
  • 3 garlic cloves minced
  • 1 cup dry lentils, rinsed and drained
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 (14-ounce) can lower-salt vegetable broth (or you can use chicken or beef broth)
  • 1 cup water
  • A couple squirts of Tabasco (optional)
  • 1 cup prepared chunky salsa
  • 12 hard taco shells, or soft taco-size tortillas
  • Garnishes: chopped ripe olives, shredded lettuce, chopped fresh tomato, shredded cheddar cheese, chopped avocado
