Exchanging Recipe Ideas with McClure's Pickles!

I had the opportunity to chat with Bob McClure, the co-founder and CEO of McClure's Pickles! We had so much fun discussing and sharing different recipes, how to spice them up, and of course, pickles!
McClure’s Dilly Cheese Ball
Ingredients
- 1 package (8 oz.) cream cheese, softened
- 1 cup McClure’s Dill Pickle Relish (drained)
- ¼ cup chopped onion
- 1 ½ cup of shredded cheddar cheese
- 1 Tbsp. Worcestershire sauce
- 2 Tbsp. mayonnaise
- 2 Tbsp. minced parsley
Instructions
- Mix the first six ingredients together until the cream cheese mixture is soft.
- Shape the mixture into a ball and wrap it in plastic.
- Refrigerate the ball for 4-5 hours.
- Sprinkle the ball with parsley and serve with crackers.
- For a party tray guests will really love, serve alongside McClure’s Dill Pickles!
Pickle Roll-Ups
Ingredients
- Your favorite McClure’s Pickles flavor
- Sliced deli meat (ham, turkey or roast beef)
- Cream cheese
Instructions
- Spread cream cheese on one side of deli meat of choice
- Wrap cream cheese covered side around pickle.
- Chop into individual servings.
- Enjoy!
Dilly Potato Egg Salad
Ingredients
- 4 pounds medium red potatoes (about 14), peeled and halved
- 5 hard-boiled large eggs
- 1 cup chopped McClure’s Garlic Dill pickles
- 1 small onion, chopped
- 1-1/2 cups mayonnaise
- 1 teaspoon celery seed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Paprika
Instructions
- Place potatoes in a large saucepan; add water to cover.
- Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Drain; cool completely.
- Cut potatoes into 3/4-in. cubes; place in a large bowl.
- Chop four eggs; slice remaining egg. Add chopped eggs, pickles and onion to potatoes.
- Mix mayonnaise, celery seed, salt and pepper; stir gently into potato mixture.
- Top with sliced egg and sprinkle with paprika.
- Refrigerate, covered, at least 2 hours before serving.
