  • 5 cups fresh strawberries, rinsed, hulled, sliced in half/quartered
  • 1/2 cup granulated sugar, or more depending on sweetness of berries
  • 3 Tablespoons cornstarch
  • 1/2 teaspoon fine sea salt
  • two crust pie dough, recipe follows
  • milk, as needed
  • turbinado sugar, as needed

Two Crust Pie Dough:

  • 2 1/4 cup all-purpose flour
  • 1 teaspoon fine sea salt
  • 1/4 cup granulated sugar
  • 1 cup unsalted butter, cut into tablespoons, very cold
  • 5 Tablespoons ice cold water
  • 2 large egg yolks, cold
