This recipe is from our very own Virginia Manuel who inspired In the Kitchen With Kat to begin with! I'm very grateful for this woman in my life and I'm grateful that In the Kitchen with Kat is what it is today!


  • 1/2 cup olive oil
  • 3 large garlic cloves, thinly sliced
  • 3 tablespoons tomato paste
  • 2 (15 ounce) cans white beans (cannelloni, great northern, garbanzo), drained and rinsed
  • 1/2 cup boiling water
  • Salt and pepper to taste
  • 6 ounces shredded Mozzarella cheese


Preheat oven to 475 degrees. Heat the olive oil in a large ovenproof skillet over medium-high heat. Sauté the garlic until it is golden and fragrant—do not let it burn. Stir in the tomato paste, being careful of any splattering, and sauté for 30 seconds. Add the beans, boiling water and salt and pepper to taste. Remove from the heat and sprinkle the cheese evenly on top. Bake until the cheese has melted and is lightly browned in spots—5 to 10 minutes. Serves 4.
