Ingredients

Eggs Benedict

  • 2 medium tomatoes, cut into 4 slices each (optional)
  • 1 teaspoon olive oil
  • salt & fresh ground black pepper, to taste
  • 8 slices Canadian bacon
  • 4 English muffins (I like using whole wheat – or try making your own)
  • 2 teaspoons distilled white vinegar*
  • 8 large eggs*

Hollandaise Sauce

  • 7 Tablespoons unsalted butter
  • 3 large egg yolks
  • 1 Tablespoon fresh lemon juice
  • salt & fresh ground black pepper, to taste
