- 3 cups unbleached all-purpose flour
- 2 1/2 teaspoons baking powder
- 2 large eggs, lightly beaten
- 3 cups low-fat buttermilk
- 1/2 teaspoon baking soda
- Kosher salt with freshly ground pepper
- 1 cup safflower oil and more for brushing
- 4 thin chicken cutlets (about 1 pound total), patted dry
- Pure maple syrup and hot sauce, such as Tabasco, for serving
